So here is another great creation for those craving something sweet and warm and totally healthful. Banana walnut bread without any oil or refined sugar. Yes, you heard me right. Instead I use a whole grated apple, some apple sauce, some almond milk and a couple Mejdool dates to create the texture and sweetness of a traditional banana bread. This recipe is vegan, oil free, refined sugar free and gluten free. Just nature’s sweet, cozy, heart warming natural goodness!
Ingredients:
- 1 and 3/4 cups oat flour
- 1 medium to large apple grated
- 1/2 cup unsweetened apple sauce (replaces oil in baking)
- 1/4 cup unsweetened almond milk (makes batter a bit more moist)
- 1 tsp cinnamon
- 1 tsp pure vanilla extract
- 1/4 tsp nutmeg
- 1 tsp baking soda
- 1 tsp baking powder
- 3-5 Mejdool dates pitted and diced very small (depending on how sweet you want the bread to be)
- 3 very overripe bananas
- 1 tbs of chopped walnuts for topping
Directions:
Preheat oven to 350F. Wash and grate apple into a bowl. Mash bananas in a seperate bowl and combine the two. Add remaining ingredients except for walnuts and mix extremely well.
Line a loaf baking pan (9 inch) with parchment paper and pour mixture into the pan evenly. Top with chopped walnuts and place in the oven for 45 mins or until a toothpick can be entered into the center of the bread and come out clean. You can lift the bread out of pan by lifting the parchment paper. Put on cooling rack for 10 mins to cool and voila!
Wrap the leftovers in tin foil after it has cooled off and enjoy with your morning coffee for the next few days. I usually like to smother some natural crunchy peanut butter on top of the bread when I have it the next day! Soooo good! Enjoy!

Jennifer, thanks for your comment 🙂 most recipes that I post are gluten free, or they can be easily made gluten free. Just make sure the oat flour is certified gluten free!
